Pumpkin Muffins

I know fall is slowly transitioning into winter, but I'm still enjoying eating the flavors of fall! I was in the mood for something pumpkiny, so I evolved my recipe for Pumpkin Bread, but made them into muffins instead.

The only change to the recipe was putting them in muffin cups and not in bread form, so I baked the muffins at 350 degrees for 20 minutes, and the recipe yielded about 3 dozen. I ended up taking about half of them to a party, so they didn't last long around our house!
