Eatin' from the Pantry Challenge: Week 3 Update

We are in the home stretch, baby!

My freezer in the garage is just about cleaned out but my pantry is still pretty full. I'm not trying to clean out absolutely everything, but I could easily move everything to my inside freezer. I'm on my last loaf of bread from my trip to the discount bakery, and my stockpiled baking supplies are just about gone. My pantry overflow into the laundry room is still there, but hopefully by the end of the month I'll be able to get those boxes or crackers and cans of beans into my pantry.

Since I was in the midst of my pantry challenge, I read this blog post this week about when to stop stockpiling at Family, Stamping and Food that made me contemplate how far I wanted to push the challenge.

Sat Jan 15: Kiddo had PB&J, grownups had takeout Gyros after bedtime

Sun Jan 16: Broccoli Cheddar Soup (new recipe), Garlic Bread
The frozen broccoli and garlic bread were from the freezer

Mon Jan 17: Frozen Pizza, Salad

Tue Jan 18: Lime Pepper Chicken, Fajita Veggies, Black Beans, Mexican Rice & Ice Cream Sandwiches (my mother-in-law's birthday "cake") Chicken, veggies, and rice from the freezer

Wed Jan 19: Takeout Chinese

Thurs Jan 20: Baked Salmon, Oven Fried Potato Wedges, Green Pea sauté with onions (a new try to liven up frozen green peas! - loosely based on this recipe)

Fri Jan 21: Steak in a Creamy Tomato Sauce, ziti noodles, green peas (the rest of the bag of peas from the night before)

Desserts I made this week:
Peanut Butter Cookies

Other batch cooking:
2 - 9x13 pans of Baked Oatmeal - one to eat next week, the other pan was individually wrapped for later in the month.

How did I do at the grocery store?
Last week, I only spent 19.08, so this week I had a little more to spend, so this week I spent $29.00! Totally under budget.
