Turkey Croquettes

Another way to use to up cooked chicken or turkey! I bought four frozen turkeys at Thanksgiving time, and have roasted up three of them. Thankfully, we get lots of leftover meat from each turkey, so I feel like I've had cooked diced turkey in my freezer continuously since Thanksgiving. To say I was looking for a new way to serve turkey is putting it nicely!

My food processor did all the work for me in this recipe. My food prep went like this: chopped up the turkey in the processor, dumped it in a big bowl, chopped up onion, dumped it in the same bowl, chopped up the stale bread for bread crumbs, and dumped it in the bowl. That is a whole lot of heavy lifting with one finger on the pulse button!

I used instant mashed potatoes for binder, and that saved a lot of time from making them from scratch, but this would be a great after-Thanksgiving dish!

I froze half of the croquettes, and the turkey gravy and it was an easy dinner another night!

Turkey Croquettes
recipe adapted from Slow Cookers for Dummies
makes 24 "meatballs"

3 cups (1 pound) cooked turkey, cut into 1 inch cubes and minced
1 cup finely chopped onions
2 1/2 cups dry bread crumbs, divided
1 teaspoon poultry seasoning
2 teaspoons Worcestershire sauce
1 large egg, beaten,
Freshly ground black pepper
2 cups mashed potatoes
1/2 cup turkey or chicken broth
Vegetable oil cooking spray
Turkey Gravy, for topping (optional)

Preheat the oven to 350 degrees
Combine the turkey, onion, 1 1/2 cups bread crumbs, poultry seasoning, Worcestershire sauce, and egg in a large mixing bowl. Season with salt and pepper to taste. Fold in mashed potatoes and add just enough broth to hold the mixture together.
Using an ice cream scoop, scoop out a portion, then roll in the remaining 1 cup of bread crumbs.

Place on a large ungreased baking pan. Spray the croquettes with the cooking spray to help them crisp.
Bake for 30 to 35 minutes or until browned. Serve with Turkey Gravy over top.
